Personality:
Grogu is a mysterious being. There's limited information about his history, but he doesn't seem to be defined by his past, so that doesn't seem to matter very much. While we know that he had been rescued from the Jedi Temple, so he's lost many friends and mentors, he doesn't dwell on that. He's very much focused on the present. If he's hungry, he eats, if he's tired, he sleeps, if he's bored, he finds something to occupy himself. He lives in the moment, and reacts to the stimuli around him.
At 50 years old, he's still very much a child. Curious and mischievous, if not watched very carefully, he tends to get into trouble. He likes to explore and see what things do, i.e. pushing random buttons. He knows what he wants and if someone isn't going to give it to him, he'll get it himself. Of course, being very small, it's easy for the adults around him to prevent him from doing so or take things away from him (much to his dismay). He also doesn't really listen to 'No.' If he really wants something, the only way to keep him from it is to make it impossible for him. He also finds great joy in things that others might not (i.e. giggling while Din is doing some crazy flying and destroying Tie Fighters).
He's a very food driven being. He's a growing Jedi! There are many times during the series where we see him pursuing food despite someone telling him no. He steals eggs from the nice frog lady, he wanders off into the cave to eat spider eggs, and he uses the Force to steal cookies from the kid on Nevarro. That's not to mention chasing and eating a live frog-like creature. All else fails, the kid could likely be bribed with food.
He's still a youngling in Jedi terms, but he does know how to use the Force and he still has Force training. At first, during his travels with Din, he's very reluctant to use it. He'd kept himself safe this long by hiding the Force after all. He only uses it to save Din. Din is his protector. He might not be able to do very much, but he uses the Force when he can to keep Din safe. As he grew more comfortable being with Din, he used the Force more often, usually to steal the knob on the top of one of the control sticks of the Razor Crest. We don't see how powerful he really is until Gideon kidnaps him and he's seen wiping the floor with two Storm Troopers. Kid's got skills! He's just got a low-power battery. He can kick ass, but then he falls fast asleep and is left completely vulnerable until he recharges.
He's grown immensely connected to Din during their travels. As they journey together, their relationship seems less like one of a guardian and their charge, and more like father and son. It's because of this closeness that Ahsoka refuses to train Grogu. He's attached to Din in a way that most Jedi would consider detrimental to his training. It's the sort of emotional connection that leads one to behave in an irrational manner. Grogu is still a child, so he doesn't understand that it could be a problem, he just knows that Din is his family and will go to great lengths to protect that. It causes some uncertainty, because he knows he should be with the Jedi and continue his training, but he doesn't want to leave Din. What's a kid to do?
Communication isn't the easiest thing for this kid. He doesn't yet know how to speak, though he definitely seems to understand most of what others are saying to him. He just chooses to ignore things like 'no' and 'don't touch that.' It does make things complicated and frustrating sometimes, but he does his best! He tries to communicate in his own way, using all manner of noises and body language to convey his thoughts. It's not easy being a kid in this galaxy. He definitely likes being referred to by his name instead of some variation of 'the kid', though.
By and large, Grogu is a child who's trying to figure out where he fits in the universe. Everything he once knew was ripped away from him and he was left in darkness for a very long time. Now he's going on adventures and exploring with Din and learning about the universe in ways he wouldn't have as a Jedi youngling. It's exciting, and scary. He's still working on figuring out who the bad guys are. He'll get the hang of it eventually. In the meantime, Din and his friends have their hands full keeping him out of trouble.
Abilities: THE FORCE. That in mind, he's an old youngling. He can move things and Force-bitch-slap some Stormtroopers, and he can do some degree of mental telepathy with fellow Jedi. However, he can only do so much before he needs a nap.
